Creamy Tomato & Basil Pasta

Ingredients:

- 8 ounces gluten-free pasta (or regular if not following a gluten-free diet)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 ounces) crushed tomatoes
- 1/2 cup vegetable or chicken broth (check for gluten-free if needed)
- 1/4 cup heavy cream (or dairy-free alternative)
- 1/4 cup fresh basil leaves, chopped (or 1 teaspoon dried basil)
- Salt and pepper to taste
- Grated Parmesan cheese (optional, for serving)

Instructions:

1. Cook the Pasta:
   - Bring a large pot of salted water to a boil.
   - Cook the gluten-free pasta (or regular) according to the package instructions until it's al dente.
   - Drain the pasta and set it aside.

2. Prepare the Sauce:
   - In a large skillet, heat the olive oil over medium heat.
   - Add the finely chopped onion and minced garlic to the skillet.
   - Sauté for about 2-3 minutes, or until the onion becomes translucent and the garlic is fragrant.

3. Add Tomatoes and Broth:
   - Pour in the crushed tomatoes and vegetable or chicken broth.
   - Stir to combine and bring the mixture to a simmer.

4. Simmer and Season:
   - Let the sauce simmer for about 10 minutes, allowing it to thicken and the flavors to meld.
   - Season the sauce with salt and pepper to taste.

5. Add Cream and Basil:
   - Stir in the heavy cream (or dairy-free alternative) and chopped fresh basil (or dried basil).
   - Cook for an additional 2-3 minutes, or until the sauce is heated through and the basil is fragrant.

6. Combine with Pasta:
   - Add the cooked pasta to the skillet with the creamy tomato and basil sauce.
   - Gently toss to coat the pasta with the sauce.

7. Serve:
   - Optionally, top each serving with grated Parmesan cheese.
   - Serve the creamy tomato and basil pasta warm.
