Slow Cooker Chicken and Rice

Ingredients:
- 1 cup long-grain white rice (or a preferred type of rice)
- 1.5 pounds boneless, skinless chicken breasts or thighs
- 2 cups chicken broth (low-sodium if preferred)
- 1 cup mixed vegetables (e.g., peas, carrots, corn, or a preferred vegetable mix)
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon onion powder (optional)
- 1/2 teaspoon dried thyme (optional)
- 1/2 teaspoon dried parsley (optional)
Instructions:
1. Rinse the rice thoroughly under cold water until the water runs clear. Drain well.
2. Place the rinsed rice in the bottom of your slow cooker.
3. Place the chicken breasts or thighs on top of the rice.
4. Sprinkle the salt, black pepper, garlic powder, onion powder, dried thyme, and dried parsley evenly over the chicken.
5. Add the mixed vegetables on top of the chicken.
6. Pour the chicken broth over the entire mixture.
7. Cover the slow cooker and cook on low heat for 6-7 hours or until the chicken is cooked through and the rice is tender. You can also cook it on high heat for 3-4 hours, but low heat is recommended for more tender chicken.
8. Once the cooking time is complete, use a fork to shred the chicken into bite-sized pieces right in the slow cooker.
9. Stir everything together to ensure the flavors are evenly distributed.
10. Serve the slow cooker chicken and rice as is, or you can add some sauce or seasoning according to personal preferences.
