This recipe is a personal favorite, making for a most welcome, minimal effort change-up to our weekly dinner line-up.
Ingredients
- 2-4 boneless, skinless chicken breasts
- One pack McCormick Grill Mates Marinade Mix - Tomato, Garlic & Basil
- One Jar of Sun Dried Tomato Pesto
- Deli Sliced Pepperoni
- 16oz block of whole milk, Italian-style Mozzarella cut into 1/4 inch slices
Instructions:
1. Prepare the Chicken
-Rinse the chicken breasts with running water and remove any excess fat or membranous tissue

- Prepare the marinade mix as instructed on packaging
- Work chicken into marinade well and let sit for at least one hour in refrigerator
2. Assembling
- Place chicken breasts on designated surface for handling raw meat
- Spread tomato pesto within both sides of the inner lining of each breast evenly using one spoon for scooping pesto out of the jar and
another for spreading on the chicken with no cross contact between the two
- Arrange a layer of pepperoni slices on one side of the inner lining of each breast
- Place a slice of mozzarella over the layer of pepperoni slices
- Sandwich the breasts closed
3. Air Frying:
- Preheat your air fryer to 400°F (204°C).
- Place the chicken breasts in a single layer in the air fryer basket. Make sure they are not touching each other to ensure even cooking.
- Cook the chicken in the preheated air fryer for about 18-22 minutes. The exact time will depend on the thickness of your chicken
breasts. The internal temperature should reach 165°F (74°C) when fully cooked.
- Once the chicken is cooked, remove it from the air fryer and let it rest for a few minutes.
4. Serving:
- Serve the chicken breasts with your choice of sides, such as roasted vegetables, pasta, Jasmine Rice (recommended), or a fresh salad.
